Energy Boost Bok Choy

Ingredients:

2 cup vegetable broth
6 tbsp soy margarine
1 ½ lbs. baby bok choy, trimmed
1 tsp Asian sesame oil

Bring the broth and soy margarine to a simmer in a large, deep, heavy skillet. Arrange the bok choy evenly in the skillet and simmer, covered, until tender, about 5 minutes. Transfer the bok choy with tings to a serving dish, cover, and keep warm. Boil the broth until reduced to about ¼ cup, then stir in the sesame oil and pepper to taste. Pour the broth over the bok choy and serve.

Help Me Sleep Red Lentil Stew

Ingredients:

1 cup red lentils, soaked
1 tbsp ground cumin
1 piece kombu (or two bay leaves)
1 small lemon
3 med rutabaga or turnip, chopped
1 med onion
2 cups water
3 cloves garlic, chopped
2 parsnips, chopped
1 pinch sea salt

Directions:

-Drain the soaking lentils.
-Add two cups of water to the pot.
-Bring lentils to boil and skim off any foam. Turn down heat.
-Add kombu, parsnips, garlic and onions. Cook for 5 minutes. Add cumin.
-Cover and cook 35 minutes, stirring occasionally (the more you stir, the creamier the stew will be).
-Add juice of ½ lemon and 1 tsp. salt to pot.
-Stir well.  Taste and adjust seasonings.

Banish Bad Moods Now Brown Rice

Ingredients:

1 pkg Trader Joes pre-cooked brown rice
2 cup water
1 large carrot cut medium dice
1 stalk of celery cut medium dice
2 scallions cut small
2 tablespoon of tamari
pinch of curry (optional)
3 tablespoon of olive oil
1 clove chopped garlic
Parsley or any other fresh herb you like.

Directions:

1. Heat oil in skillet on medium heat, add carrots, celery, scallions, curry and garlic
2. Sauté for 3 minutes
3. Add precooked rice and tamari, cook for 3-5 minutes
4. Stir in herbs and serve hot.
